Weekly Meal Plan: 10/13-18
I’m at the midpoint of what I knew would be two difficult weeks, but I never expected to get sick in the middle of them! If the name of the game last week was surthriving - a mashup of “surviving” and “thriving” that I think I heard from @tidydad on Instagram - this week ahead is pure surviving.
The kids have Monday off school and technically work is closed, but I’ll probably have to go in for a few hours because our annual gala is this Friday night. I have my mom and a babysitter lined up for Tuesday and Wednesday this week, as I know I’ll have to work past 5:30 on those evenings but don’t know how late, and then Jon will get home in time to pick-up the kids on Thursday, when I definitely won’t get home until after 7.
So this week’s meal plan is more… an assortment of ingredients we have that can easily be assembled by me, Omi, our babysitter, or Jon without any prep into dinners. (Except tonight’s, because I’d taken the steak out of the freezer a couple of days ago and it needs to be cooked.)

kids: dino nuggets and pesto pasta with sliced veggies

kids: meatballs in red sauce with rice and sliced veggies
