Weekly Meal Plan: 10/29-11/3
For my own breakfasts, I’ll have smoothies (fruit, kale and spinach, oat milk, and protein powder) and/or hard-boiled eggs. On Monday, I’ll roast a sheet pan of veggies that I can have along with leftovers for lunch through the week.
I’ll be in the office on Thursday this week and have a work event that evening, so the kids will have a sitter. Jon will be in his office on Tuesday and then will be out of town Wednesday through Friday for work.
Sunday:
chicken sausage, brown rice, and roasted Parmesan broccolini
Monday:
peanut noodles with chicken or tofu, cucumbers, and carrots
Tuesday:
Halloween: frozen pizza and raw veggies
Wednesday:
take-out from a local Greek restaurant
Thursday:
kids: soft tacos with chicken, black beans, peppers, and avocado
Friday:
adults: garlic basil barramundi with tomato butter sauce, couscous, green salad
kids: leftovers from Wednesday with couscous
