Weekly Meal Plan: 3/31-4/5

 

A pretty standard week! I’ll be in the office Monday through Thursday midday - I have an appointment at lunch and will work from home afterwards - and I have plans with friends on Thursday evening. Jon will be in the office on Tuesday and Wednesday. We’re hosting a full roast for Easter lunch today (Sunday), so dinner tonight will be a foraging affair. And, as you might remember from last week, the kids have started swimming classes on Monday evening, so Jon will bring them to the pool while I take the bus home from the office and then get dinner started.

tortellini with pesto, green beans, and leftover roast beef

Tuesday:

chicken piccatish (from this recipe) with couscous and leftover roasted carrots

Wednesday:

tofu curry with brown rice

Thursday:

TBD (something from the freezer)

Friday:

garlic basil barramundi
