Weekly Meal Plan: 6/23-6/28

 

We’ve made it halfway through this 12-day stretch of solo parenting! It’s actually been fine, as it usually is. Hard but fine. As I said on Instagram the other day, the secret is: lower your standards.

An easy meal plan helps with that.

I’ll be out on Monday and Thursday evenings - for a work event and a concert, respectively - and my mom is babysitting, so I’ll plan meals for those nights that I know the kids will like to make her time with them smoother.

Sunday:

leftovers plus corn fritters

Monday:

mac and cheese with sausages and sliced veggies

Tuesday:

tacos

Wednesday:

forage

Thursday:

matzah ball soup, bagels with lox and cream cheese

Friday:
