Weekly Meal Plan: 7/14-7/19
Jon leaves tomorrow for his second stint in Aspen of the summer; it’s a slightly shorter trip than the first, only (ha, only) eight days as opposed to 12. So this is another meal plan for a week of solo parenting with a work event in the middle! On top of that, the freezer and pantry are almost bare and I don’t want to do a huge grocery shop. These dinners are not going to be super inspiring…
First, though, we have the UEFA Euro 2024 match: England v. Spain. They’re playing this afternoon and we’ll be watching at a restaurant, so I don’t know how hungry we’ll be for a proper meal afterwards.

kids: mac and cheese, chicken sausage, broccoli
Tuesday:
kiddie chicken parm: dino nuggets with red sauce, mini naan, and shredded mozzarella; sliced veggies
Wednesday:
breakfast for dinner: scrambled eggs, bagels with lox and cream cheese, and fruit salad
Thursday:
kids: pizza (Omi babysits)
Friday:
out to dinner
