Weekly Meal Plan: 7/28-8/2

 

We did it: for the first time since May, I think, we went to Costco. Phew. That was long overdue.

Our priority was buying items we want to bring to our two-week vacation - groceries are more expensive on the island - but we grabbed a few staples for the week ahead that we were out of, like dino nuggets and pesto. (My kids will only eat Kirkland brand pesto. Go figure.)

Jon and I are trying to wrangle a date night this week, but otherwise we’ll both be home every evening. We need that after the last two months!

Sunday:

leftover TJ’s sun-dried tomato and basil-marinated chicken tenders with Costco orzo salad

Monday:

tilapia with jammy cherry tomatoes and good bread
kids: dino nuggets, sliced veggies, and mini naan with cream cheese

Tuesday:

TJ’s spinach raviolini with pesto, chicken sausage

Wednesday:

meatballs with red sauce over rice, sliced veggies

Thursday:

soup dumplings, tofu fried rice

Friday:

pizza and sliced veggies
