Weekly Meal Plan: 8/25-30

 

It’s the first week of school! Well, sort of: Robbie starts back on Monday but Claire doesn’t start until Wednesday, when she has a half day, and there’s no aftercare until Labor Day. So we’re still scrambling a bit, schedule-wise, but we’re that much closer to what our new normal routine will be.

Sunday:

hamburgers, corn and tomato and halloumi salad

Monday:

miso-glazed salmon and eggplant with bok choi and couscous

Tuesday:

marinated tofu and broccolini over rice
kids: meatballs over rice with sliced peppers

Wednesday:

kids: mac and cheese, sliced veggies

Thursday:

zucchini and corn fritters, gyro meat, tzatziki, mini naan
kids: dino nuggets and fritters

Friday:

leftovers
kids: pizza
