Weekly Meal Plan: 11/5-11/10

 

For my own breakfasts, I’ll have smoothies (fruit, oat milk, and protein powder) . On Monday, I’ll roast a sheet pan of veggies that I can have along with leftovers and/or hardboiled eggs for lunch through the week.

Jon’s mum arrives on Monday for a week-long visit. I have a work event and will be in the office on Thursday this week. Jon will be in his office on Wednesday and Thursday. On Friday, Robbie and I head to Boston to visit my sister for the weekend.

Sunday:

leftover pizza and bagged Caesar salad (both from Costco)

Monday:

Thai takeout
This is a sacred tradition; we always get Thai the night my mother-in-law gets into town.

Tuesday:

white bean, parsnip, and potato stew (based off of this Minimalist Baker recipe) with good bread
kids: solids from the soup and dino nuggets

Wednesday:

Betsy: out
Jon, Ged, and kids: TBD by Jon

Thursday:

spaghetti and red sauce with turkey/veggie meatballs (made with Trader Joe’s Holiday Vegetable Hash)

Friday:

Betsy and Robbie: in Boston
Jon, Ged, and Claire: TBD by Jon
