Weekly Meal Plan: 1/7-1/12
We’re back from two weeks in England! We did a good job of working through our fridge and pantry before leaving so made a Costco run yesterday to restock on non-perishables and I’m heading to the supermarket for produce and some smaller quantities of bits and pieces later today.
Since we’re still easing back into things, we’ve got a quiet week planned. The kids will be back in school, Jon’s going into the office on Tuesday and Wednesday, and I’ll be in the office on Thursday.

butternut squash and chickpea curry with tofu over rice

kids: mac and cheese and chicken tenders with veggies
Wednesday:
Trader Joe’s carne asada and Harvest Blend Grains with roasted mushrooms and parmesean
Thursday:

kids: pizza
Friday:
pork tenderloin with mashed potatoes and green beans
