Weekly Meal Plan: 5/12-5/17
Jon left for a work trip early this (Sunday) morning and will be out of town through Tuesday, so I’m going to keep the front of the week simple. It helps that we have leftovers from Saturday’s early Mother’s Day breakfast - waffles and bacon - and Sunday evening’s grill! I’m WFH on Monday and will be in the office Tues-Fri; I think Jon will be WFH on Wednesday and Friday but in the office on Thursday. He’s got poker night with the boys on Friday so will be home to help with the transition from school into dinner but probably won’t eat with us, so I think I’ll indulge in take-out that he doesn’t like.
Sunday:
leftover lamb, green bean and tomato salad, and couscous.
Monday:
breakfast for dinner: scrambled eggs, bacon, and waffles
Tuesday:
Tuscan sausage pasta with broccoli
Wednesday:
chicken piccata with brown rice and asparagus
Thursday:
leftovers
kids: mac and cheese, dino nuggets, veggies
Friday:
forage / take-out
