Weekly Meal Plan: 6/11-6/21

 

My meal plans usually span six evenings, but we got back from a long weekend in England on Monday night and Jon leaves for a two-week work trip next Wednesday so I’m trying to think a little longer-term to help me prep for solo parenting.

Here’s what we have going on this week: I have a work event on Thursday evening, and I’ll be taking the kids to a birthday party on Friday evening while Jon heads to a friends’ house for poker with the boys. We’re planning on grilling for dinner on Saturday.

Next week: I’m out Monday night and Jon leaves on Wednesday for his trip. I might have to work late on Thursday, in which case my mom will babysit.

Tuesday:

quesadillas, peppers

Wednesday:

pasta with pesto, chicken sausage, and broccoli

Thursday:

hamburgers

Friday:

pizza (birthday party)

Saturday:

grill - menu TBD to include a dessert from @lacuisinedegeraldine

Sunday:

barramundi with lemon butter sauce, vegetable side from @lacuisinedegeraldine, couscous

Monday:

leftovers

Tuesday:

pasta from @lacuisinedegeraldine

Wednesday:

breakfast for dinner: scrambled eggs, sausages, waffles, fruit salad

Thursday:

pizza, sliced veggies

Friday:

out to dinner
