Weekly Meal Plan: 7/7-7/12

 

I’m really proud of how I’ve been getting through our freezer and pantry stashes and not buying more than we’ll eat in my weekly grocery runs. We leave for two weeks of vacation in four weeks and, in the interim, Jon will be out of town for eight days, so we’re not going to replenish with a Costco run until late August. I also want to keep our shopping list as lean as possible while being somewhat healthy, so this week’s meal plan was a bit of a challenge!

We’re going to a matinée baseball game today, Sunday, so might not have much appetite for dinner when we get home. I’m hoping to schedule a double date for one evening this week if the other couple’s schedule allows and we can get a babysitter. Otherwise, we’re all home every night this week.

Sunday:

forage

Monday:

chicken picattish, broccoli, and pearl couscous

Tuesday:

lemon tilapia, farro salad (tomatoes, corn, halloumi)

Wednesday:

tofu fried rice

Thursday:

garlic shrimp with spinach, egg noodles
kids: meatballs and red sauce with egg noodles

Friday:

leftovers, out to dinner, or take-out depending on how we’re feeling about our budget
