Weekly Meal Plan: 10/22-10/27

 

For my own breakfasts, I’ll have smoothies (fruit, kale and spinach, oat milk, and protein powder) and/or raisin bran muffins my mom made us. On Monday, I’ll roast a sheet pan of veggies and hard-boil some eggs that I can have along with leftovers for lunch through the week.

I’ll be in the office on Tuesday - with a late meeting that evening - and Thursday this week. Jon will be in his office on Tuesday and then will be out of town Wednesday and Thursday for work.

Sunday:

leftovers / clean-out the fridge

Monday:

chicken stew with good bread

Tuesday:

Betsy: out
Jon: forage
kids: leftover stew with rice

Wednesday:

chicken Parmesan (with frozen breaded chicken tenders from Costco and jarred marinara sauce), pasta, and bagged salad

Thursday:

breakfast for dinner: waffles, scrambled eggs, and fruit salad

Friday:

sausage and sundried tomato orzo (made by combining these two recipes from Salt & Lavender: Creamy Tuscan Orzo and Italian Sausage Orzo)
